Other than sippin’ on Bambus these past two weeks, and trying not to look like a lush, I’ve also been stuffing my face with lots of this Cranberry Bliss Saltine Toffee. In some parts, a version of this toffee is calledChristmas Crack. You know why?! BECAUSE this stuff is addictive! There’s no stopping. You just keep going back for more, even when your stomach tells you that you’ve had eeeenuff!
However, my version of Christmas Crack, inspired by the Cranberry Bliss Bars from Starbucks, is kind of better than the original, and I’m not just saying that. Well, yes, I am, but it’s my blog, so, I can do that. (Right?)
Honestly? This toffeeis some serious business. It’sfinger lickin’ – lip smackin’ – mouth droolin’ – WOW!
The whole thing about cranberriesand white chocolate on top of salted crackers and sweet toffee makes my heart sing. It’s kind of brilliant. But I really am looking forward to the batch that won’t go to my hipsand instead, it will finally make it to someone’s Christmas Stocking.

Cranberry Bliss Saltine Toffee

Cranberry Bliss Saltine Toffee is made from Saltine Crackers covered with sweet toffee, melted white chocolate and tart cranberries. This easy Saltine toffee recipe is perfect for the holidays!
2bags(12-ounces each) white chocolate chips, chopped
1tablespoonvegetable oil
1bag(5-ounces) dried cranberries
Instructions
Preheat oven to 400.
Line a jelly roll pan with aluminum foil and grease with cooking spray.
Arrange the saltines, one next to another, in a single layer; set aside.
In a small saucepan combine butter and light brown sugar; cook over medium heat, stirring frequently, until butter is melted.
Increase heat to medium-high and bring to a boil; continue to cook, stirring frequently, until it turns a caramel color; about 1 minute.
Remove from heat and pour over the crackers.
The crackers will start to move around; use a rubber spatula to set them back in place.
Bake in the oven for 4 to 5 minutes, or until mixture is bubbly.
In the meantime, set up a double boiler and combine chopped chocolate chips and vegetable oil in the top bowl.
Melt the chips, stirring constantly, until most of it has melted but remove from heat while a few lumps are still present. The chocolate will continue to melt while you continue to stir it.
Remove crackers from oven.
Pour HALF of the melted chocolate over the crackers and smooth it out with a knife; let stand 1 minute.
Slowly pour the rest of the melted chocolate and smooth it out again using a knife or an offset spatula.
Add dried cranberries on top.
Place in the freezer for 20 minutes, or until cold.

If your saltine toffee, or Christmas crack, is chewy, it's because the chocolate hasn't fully set yet. Try popping it in the fridge for 15 minutes to firm it up. Do not store it in the fridge for any longer than 15 minutes, however.

It's important while the toffee cooks to only stir it occasionally. Constant stirring can cause the toffee to crystallize and separate. For those of you that need to know exactly how often you should stir, I would suggest erring on the side of not stirring more than stirring.
Made with just sugar and a little water, toffee is easy to make and is an easy introduction to the world of confectionary. This recipe includes a dash of vinegar which will help keep the colour of the toffee clear and bright and banish any cloudiness.
If you find that your candy is very sticky and chewy it's most likely because you didn't cook the brown sugar and butter long enough. Make sure it comes to a good roiling boil and continues to boil for the entire 3 minutes. This toffee will be slightly chewy, but it shouldn't be very sticky or super soft.
However, crackers are not one of them. Moisture is the number one way to kill a crunch, and placing crackers in the fridge can cause them to go soggy rather quickly. Instead, to keep your crackers crunchy, place them in an airtight container and store them at room temperature.
But overcooked toffee will be just slightly crunchier (almost unrecognizably). So, always err on the side of over-cooking! Tip 2 explains how to do so! In order to avoid your chocolate turning white, you'll want to let it set in a room temperature spot without exposure to any drafts.
